EVERY second counts at that level of play and, if someone lags in production and/or overcommits to any flawed tactics, it's over for them. That said, two very good players can stalemate one another for quite a while - I think the longest match I watched this weekend was an 30min+ Terran vs. Terran matchup in which both players spent the whole game trying to out micro one each other with tanks + marines, which was an awesome back-n-forth and very fun to follow.

That's quite interesting. I was surprised how short the games were.
I haven't played either Starcrafts, but every couple of weekends I spend an afternoon playing Spring, and those games are last at least 1/2 hour.

They do, but they do it seldom and carefully.
